The publication has been extensively revised to reflect current practices for the sourcing of carbon dioxide.

The publication provides recommendations for good practices and guidance on the key characteristics for the quality and purity of carbon dioxide for use in foods and beverages. It provides quality assurance and quality control procedures necessary to ensure compliance.

There are recommendations for the qualification of plants used to produce carbon dioxide for use in foods and beverages. These recommendations are also intended to assist carbon dioxide suppliers to achieve compliance with applicable regulatory standards.
