This publication summarises the minimum specifications for food gases based on the United Nations Joint FAO/WHO Expert Committee on Food Additives (JEFCA) and European Union (EU) Legislation and is intended as a guide to be read in conjunction with the applicable legislation.

The publication has been revised to take into account some corrections.

The publication is intended for all those involved in the supply of gases for use in food gas applications including distribution, quality control and regulatory compliance.
